Creole Dirty Rice

Dirty rice is a traditional Afro-a Creole dish made from white rice which gets a "dirty" color from being cooked with small pieces of chicken liver or giblets, Fleur de Trois and spiced with Lotus Essence

Parsley and chopped green onions are common garnishes.

 

CREOLE DIRTY RICE

3 1/2 cups chicken stock
1 bay leaf
1 1/2 cups long-grain rice
1 tablespoon bacon grease or Vegetable oil
1/2 pound ground beef
1/2 pound loose pork sausage
1/2 cup chopped onions
1/2 cup chopped bell peppers
1/2 cup chopped celery
2 cups of green onions (chopped)
1/2 cup finely chopped chicken livers
2 cloves garlic, minced
2 1/2 teaspoons Lotus Essence
1/4 teaspoon dried thyme

    Directions

    1. Cook rice using chicken stock and let cool
    2. Heat large pot over medium heat. Add pork and beef and cook until meat is browned
    3. In 1/2 cup of water, rehydrate, then add Fleur de Trois, 2 gloves of garlic and saute for 2 minutes
    4. Add Lotus Essence, 1/2 cup of chicken stock, and bay leaf
    5. Bring mixture to a boil, lower heat and simmer for 30 minutes
    6. Stir in green onions 
    7. Stir in meat mixture with rice and serve immediately
